From Meal Prep Boxes to Misfits Market

During the busy times at work, I come home exhausted. Once we have eaten what I cooked on the weekend, I either dig deep and find some more energy/creativity, or we eat pizza or cheesesteaks or go out. This pattern is unhealthy for our bodies and our budget, so I started ordering Hellofresh, HomeChef, and BlueApron boxes (not all at once, and only with a discount code). It was really nice thinking “oh, we have a box meal tonight, so I don’t have to think about dinner. It’s all ready to just cook.”


While I enjoy these meal prep boxes, they fall into 2 categories: starch heavy or tiny portions. Enter the Misfits Box! I started adding 1 or 2 servings of veggies to each meal. If it was a starch heavy meal, I added veggies to make a third/fourth serving (think “lunch for tomorrow”). In other cases, I just make the dinner more filling by adding more veggies. Example: if your original box meal is just a chicken breast with a salad, add steamed broccoli or make the salad bigger with your radishes and cucumbers. With this two-box system, I got to the point where I was going to the store every ten days for half and half, cheese, eggs, and meat. I love grocery shopping and cooking, but during the busy seasons at work, I loved the simplicity of food delivery. When I’m less busy, I cut back to the Misfits Box only.


I know this could be a lot of boxes, but if you start slowly, you can figure out a system that works for you. And remember, you have the option of getting a Misfits Box every other week. Go for it!!!
